I do use different temperatures with different speed profiles. For example 210c on 40mm/s and 215c on 60mm/s to achieve the same layer adhesion and strength.

Also I'd recommend Vulcano upgrade for your E3D v6 if you are looking for speed.

I do custom build plates in Cura for some custom machines.
Yep you need to do manual .json file for your machine and start/end code isn't editable from the GUI but well - you need to do it once effectively anyways.

I'd definitely check your heated bed, might be it's out of spec and was the cause.
Simply check resistance between both wires with multimeter, shouldn't be less than 1.2ohm (thats 10A on 12v)

In my experience E3D all metal jams are caused by: 1. Long retraction length - not a problem in your case, 1mm. 2. Too high printing temps - your temp seems pretty low but depends from the filament obviously 3. Insufficient cooling of the cold end - most common in my experience, have you changed coo...
