Not sure, hbot3d site shop link is dead. Depend on how much you pay for it. Printer based on Makerbot gantry, aluminium part is nice. If that render of touch screen is accurated, they probably use close-source STM32 based controller board. That resistor is for LED that you want to install, if you don't need LED then you can skip resistor too.

If you switch the thermistors cable, does it show the same value? For example try to switch thermistors connectors between heated bed and hotend to see if the hot end channel read the temp correctly and heated bed channel show reading problem, just try to bump up the temp a bit and see if thermistor...

Since you didn't make change to any config and I guess you plug it in the same port as before, I will check the wire and connector to see if it connect properly.

What is the old one look like and did you check if they use 100k thermistors not type-K thermocouple or PT100?
Edit : so it's Sunbeam 2.0 which is Smoothieware based so that should be 100k thermistors I guess.
